Pimento Cheese is a family favorite from Robyn’s childhood, growing up in Georgia. She remembers mostly eating it with crackers, but if you have the patience to make a sandwich or a grilled cheese with it you will not be disappointed! Settlers of Catan is a great strategy game that brings out the competitive side in everyone and it's one of their favorites for family game nights too. Can't go wrong with either!

 

This specific recipe is a favorite of Robyn’s is from the Hugh Acheson's book “A New Turn in the South”. Her family loves to eat it with crackers and make some classic sandwiches. 

 

Cheese-Wheel-Icon-for-StickerGiant-Cookbook Ingredients

1 pound sharp white cheddar, such as an 18-month-old 

2 large, sweet red peppers, roasted, peeled, seeded, and diced

½ cup homemade mayonnaise (or Duke’s in a pinch)

1 teaspoon dijon mustard

½ tablespoon smoked sweet Spanish paprika

Pinch of cayenne pepper

½ teaspoon kosher salt

1 ½ cup shredded Mexican blend cheese

1 bag of Food Should Taste Good Tortilla Chips, in your favorite flavor

Grate the cheddar by hand to a medium shred and place in a large bowl. 

Add the peppers, mayonnaise, mustard, paprika, cayenne, and salt and mix thoroughly with a wooden spoon.

Not healthy, but oh so delicious.
