Linguine-Icon-for-StickerGiant-Cookbook Ingredients

2 pounds plum or cherry tomatoes, halved lengthwise

½ cup olive oil

2 cloves garlic, minced

2 tablespoons Italian seasoning

½ teaspoon (or more if you like it spicy!) crushed red pepper

¼ teaspoon black pepper

8 ounces pasta, such as Linguini or Fettucini

Place tomatoes halves cut side up on a foil-lined baking sheet, sprayed with non-stick spray. Mix 1⁄4 cup olive oil, garlic and seasonings in a bowl. Spoon over tomatoes and drizzle with 2 tbsp of olive oil.

Roast in a preheated 400º F oven for 45-60 minutes until the tomatoes are soft and browned on top.

Meanwhile, cook the pasta.

Place 1⁄2 of the tomatoes and the remaining 2 tablespoons olive oil in a bowl and coarsely mash the tomatoes. Add pasta and the rest of the tomatoes. Mix it all up!

Top with Parmesan cheese and extra crushed red pepper flakes.
