Tiffany's Mint Chocolate Coconut Bars

Ingredients
Base layer
½ cup butter, softened
1 ½ cup flour
½ cup packed brown sugar
¼ teaspoon salt
Chocolate layer
1 cup mint chocolate chips (OR semi-sweet chocolate chips tossed with ¾ teaspoon peppermint extract, OR semi-sweet chocolate chips with no hint of mint)
Topping layer
2 eggs
1 cup packed brown sugar
1 teaspoon vanilla extract
2 tablespoons flour
½ teaspoon baking powder
¼ teaspoon salt
1 ½ cups sweetened flaked coconut
Directions
Preheat the oven to 375 degrees fahrenheit. Spray a 13 x 9 x 2-inch baking pan with cooking spray. Set aside.
In a large bowl, combine base layer ingredients (butter, flour, brown sugar, salt) until crumbly. The mixture will be very dry. Pat it evenly into a solid layer in the prepared pan. Bake for 10 minutes.
Sprinkle the chocolate chips over the base and put it back into the oven for about 1 minute to soften the chocolate. While still warm, spread the chocolate evenly over the base. Let this cool while you mix the topping.
In a medium bowl, beat the eggs until thick and lemon-colored. Beat in sugar and vanilla. Combine flour, baking powder, and salt and fold into the sugar mixture. Fold in the coconut. Spread evenly over the chocolate layer. Bake 15-20 minutes until browned on top, being careful not to over-bake. Cool in the pan and cut into squares.
