Olga's Teriyaki Chicken Salad

"I mean... 2020, am I right?!??" Despite all of it though, there have been delicious things to be grateful for in Olga’s days - more unscheduled task-free time with her precious daughter, getting to actually enjoy the comforts of her home, savoring video calls for hours with far away friends, moments of freedom from a less frantic schedule... more than that too. As the whole world slowed down, Olga also grateful we collectively found space to reprioritize, and made room to take on bigger picture needs, long since overdue for quality attention. So, this year her thank you goes to what this unplanned-for bit of spaciousness has allowed - in ways both small and large.

Teriyaki Sauce

¾ cup soy sauce

½ cup + 1 tablespoons water

¼ cup brown sugar

½ teaspoon ground ginger

2 teaspoons garlic, minced

1 tablespoons cornstarch



2 boneless chicken breasts

1 tablespoon olive oil

1 medium head or container of your favorite lettuce for salads

½ cup shredded carrots

½ cup peas

2 small tomatoes, diced

½ cup cheddar cheese, or your favorite for salads

Sesame seeds

Salt & Pepper to Taste

Ranch Dressing, or your favorite

Teriyaki Sauce

Mix soy sauce, ½ cup water, brown sugar, ginger, and minced garlic in a small saucepan. Cook on medium heat until mixture just begins to boil.

While the sauce is boiling, mix the cornstarch and water in a small bowl until no lumps remain to make your slurry.

When sauce begins to boil, slowly add your slurry while stirring continuously. Reduce heat to a simmer and continue stirring until the sauce thickens. For thinner sauce add less slurry to your mix.

Heat a medium saucepan with olive oil, and add chicken and teriyaki sauce. Make sure to cook chicken thoroughly, about 7 minutes on each side.

Optional: cut chicken into strips before cooking for more sauce-ness in your salad.



Mix veggies in a large bowl with salad tongs.

Add your shredded cheese, sesame seeds, salt, and pepper at the end to individual tastes.

Salad layering system (from bottom to top): salad, cheese, chicken, sesame seeds, salt and pepper - Enjoy!
