Autumn's Vegan Black Bean Brownies

This year Autumn appreciates that she is in good health, employed, and lives in a state where she can hike every weekend to enjoy the outdoors as stress relief. 2020 has thrown so many different challenges at her (from minor things like cracking her phone, to life changing like her grandfather passing away) in the midst of a pandemic. She appreciates that everyday she can wake up and view it as an opportunity to be positive for today and hope for tomorrow.

 

Chocolate-Icon-for-StickerGiant-Cookbook Ingredients

1 1/2 cups Black Beans (1 15oz can drained and rinsed)

2 tablespoon Cocoa Powder

1/2 cup Oats 

1/4 teaspoon Salt

1/2 cup Maple Syrup

1/4 cup Peanut Butter

1/2 teaspoon Baking Powder 

1/2 cup Vegan Dark Chocolate Chips

Preheat your oven to 350 F. Combine all ingredients (except chocolate chips) into a food processor and blend until completely smooth. (If you're using a blender, make sure it blends very well)

Stir the chocolate chips into your mixture, then pour into an 8 x 8 non-stick pan. (Sprinkle some chocolate chips on the top if you'd like)

Bake it for 15-18 minutes, then let cool for at least 10 minutes before cutting it. They will be very soft before firming up. If they look uncooked, you can place them in the fridge overnight and they will harden.
