Tom's Mom's Cauliflower Salad

I love to picnic with my family at our members only fishing lake in Berthoud. We can hang out, bring the dogs, and sometimes hang with other fishing club members. Eat some good food, have some drinks and sometimes even tailgate with a TV on Broncos game days!






1 medium to large head of cauliflower, chopped

4 tablespoons extra virgin olive oil

2-3 tablespoons red wine vinegar (depending on how tangy you like it!)

2 tablespoons dried basil

2 tablespoons oregano

2 teaspoons garlic powder

Salt and pepper to taste


Add cauliflower to a large bowl.

Pour in your oil and red wine vinegar to mix and coat the cauliflower.

Add in basil, oregano and garlic powder. Add salt and pepper and mix again.

Add more garlic, salt and pepper if needed, and to taste.

Serve refrigerated.
